Freddie Janssen

Freddie was born in Maastricht in the south of Holland, where she grew up eating at local Dutch snack bars. Looking to travel further afield, Freddie moved to Amsterdam when she was 17 years old, where she studied Fashion and Advertising, then moved to central London after graduating.

While working at a boutique advertising agency, Freddie followed her passion for food in her spare time by running pop ups all over London, including sixth month sandwich pop up F.A.T. in Fitzrovia, various pop ups and residencies in East London, a market stall at Bermondsey’s Druid Street market serving sandwiches, pickles, kimchi toasties, baja fish tacos and noodles for which she won ‘Best Street Food’ at the prestigious Young British Foodie awards, and in summer 2016, a BBQ taco party concept called Snackbar. The same year, Freddie released a best selling recipe book, ​Pickled​, in celebration of all things pickled and fermented.

Freddie decided to make her passion for food full time and took on a role as marketing and PR manager for World’s 50 Best restaurant Lyle’s, working alongside chef founder James Lowe and his business partner John Ogier. After five years with Lyle’s Freddie made the leap to pursue her own solo venture, launching a successful crowdfunding campaign in order to open her first bricks and mortar site, Snackbar, in August 2019.
